In 2016, the New Roots Cooperative Farm was formed. Since then, the farmers have been working extremely hard to expand their land and create more space for their delicious crops; however, the farmers still need help from the local community. The farmers have been a part of the Lewiston Community for more than a decade, farming and establishing themselves in the community. But, now, the farmers are asking for help. They are in the process of purchasing the New Roots land, 30 acres for themselves. 

In addition to owning the New Rotos land for themselves, the farmers want to increase solar capacity, improve their irrigation system, build more storage heads, and make farm roadways. As you can see, the farmers are ambitious about the future of New Roots; however, the necessary equipment and necessities to utilize the ground require many expenses that the farmers do not have to make their dreams into realities. Ratatouille Recipe by Tasty

Ingredients

for 8 servings

VEGGIES

  • 2 eggplants
  • 6 roma tomatoes
  • 2 yellow squashes
  • 2 zucchinis

SAUCE

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • salt, to taste
  • pepper, to taste
  • 28 oz can of crushed tomatoes
  • 2 tablespoons chopped fresh basil, from 8-10 leaves

HERB SEASONING

  • 2 tablespoons chopped fresh basil, from 8-10 leaves
  • 1 teaspoon garlic, minced
  • 2 tablespoons Chopped fresh parsley
  • 2 teaspoons fresh thyme
  • salt, to taste
  • pepper, to taste
  • 4 tablespoons olive oil

I made this ratatouille recipe last week using the vegetables from New Roots. It was incredible! The only thing I would suggest is blending the sauce to make the dish have an even consistency.
